How to Get a Custom Outdoor Kitchen: The Traditional Method
Until recently, there’s only been one viable way to get a custom built outdoor kitchen.
It’s your local contractor or mason.
Makes sense, right?
Everyone has a friendly local contractor… And for most homeowners, it’s the easiest way to get the ball rolling.
They come to your house, take some measurements, give you a quote… And come back in several weeks to build your island on site.
Seems pretty straightforward. Unfortunately, working with a contractor isn’t exactly a no-brainer decision.
Challenges with Contractor-Built Custom Kitchens
Despite the fact that working with a contractor is the most common way to get a custom build outdoor kitchen… That doesn’t necessarily mean the process is problem-free.
There’s always a downside to everything… And it’s important to understand the pitfalls before entering a project with rose tinted glasses on.
So let’s get right to it.
Most Contractors aren’t Outdoor Kitchen Specialists
While your friendly local contractor may be skilled on a wide variety of projects… In all likelihood, their outdoor kitchen craftsmanship will be found to be lacking.
Why is this?
Well, it comes down to the concept of generalists vs specialists.
More often than not, your contractor is going to be a generalist. They can handle a wide variety of tasks proficiently… But they’re not masters of any one skill.
For most things, that’s not a problem.
But when it comes to a custom outdoor kitchen… That lack of expertise becomes extra problematic.
This is due to a couple reasons.
For one, your contractor’s lack of skill may visibly show in the final product. And even if it doesn’t make an appearance right away… After a few winter cycles, the mistakes become impossible to ignore.
You’re already spending a pretty penny for this project… So it’s reasonable to expect a high standard of quality that’ll last for years to come.
But even more importantly… If your contractor is a generalist, there’s a 99% chance that they don’t understand how to build an outdoor kitchen safely.
But that’s a whole other can of worms to get into.
Safety is Unknown to most Contractors
Piggybacking on the concept of a generalist vs a specialist… Unfortunately, most contractors are unaware of the safety requirements for an outdoor kitchen.
And this goes down several levels.
Material choices, design requirements, and appliance setback requirements all figure into the equation of safety.
For example, many contractors use wood to build an outdoor kitchen. It’s a solid material and saves money. So what’s the problem?
The problem is combustibility. Wood is a combustible material… And that’s exactly what you want to avoid when you have a searing hot built-in grill. It’s a fire hazard waiting to happen.
But even if they’re wise enough to avoid wood… It’s almost a guarantee that they won’t understand the importance of island ventilation.
Your outdoor grill, side burner, griddle, or other outdoor appliances are all going to be throwing off a ton of heat and gasses.
And it doesn’t take much to realize that all that heat and gas needs somewhere to go. Hence, your grill island needs ample ventilation to flush it all out.
But if your contractor is simply unaware of this requirement… You’re setting yourself up for a severe fire risk, or even an island explosion.
As you’ve certainly gathered… Your outdoor kitchen needs breathing room. And this is yet another point an unskilled contractor is likely to miss.
You don’t want your outdoor kitchen island sitting directly against a wall… As this could cause damage to the exterior of your home, and is a significant fire risk.
At minimum, your contractor will need to install a backsplash and overhead vent hood. But they also must meet the minimum setback requirements from the appliance manufacturer.
So in most cases… Your outdoor kitchen needs to be at least 12” – 24” away from the wall.
Point is, if you ask your contractor some safety related questions and their answers aren’t coming up kosher… That’s a big red flag.
You’re Limited by their Experience
Not to harp on experience too much… But this can also affect the quality of your outdoor kitchen design.
What we’re getting at is… If your contractor isn’t an expert, they may not be able to create the exact design you want. You’re limited by their skill level.
Take a stone outdoor kitchen, for example.
If you want a custom backyard kitchen made from real stone, or a concrete block island with real stone cladded onto it… Your contractor simply might not have the masonry chops to handle the task.
Which means you’ll have to be on the hunt for a true stone mason. (Which is both rare and expensive.)
If you were hoping for a simple stucco finish, you’ll probably be in the clear. But if you have grandiose visions of two-tier countertops and intricate finishes… Be prepared for a bit of a letdown.
It Might be More Work than You Bargained for
We don’t know about you… But when we imagine working with a contractor, our instinct is to think it’s a pretty hands-off process.
Sure, you’ll need to meet with them a couple times to get all the details ironed out. But after that… There shouldn’t be much more input required from you.
Right?
Well… Not always.
The reality is, most contractors aren’t building many custom outdoor BBQs. And because of that, they typically don’t have direct relationships with appliance manufacturers.
So instead of letting your contractor source appliances for you… That task gets dumped onto your plate instead.
Do you want an Alfresco grill? A Big Green Egg? How are you supposed to know?
If you’re a nerd about outdoor appliances, you might actually prefer it that way. But more often than not… You’d rather defer to the expert opinion.
And all of a sudden, a ton of research was added to your plate.
You need to understand appliance cutout sizes, material quality, utility requirements, setback requirements… And that’s just the beginning.
Ultimately, the need to select your own appliances might not be a deal breaker. But it’s important to know what you’re getting into ahead of time.
Timeline Expectations Often Don’t Meet Reality
And speaking of time… Expectations tend not to meet reality in this area.
Your local contractor is always juggling several different projects at a time. Which means, you’re not getting their undivided time and attention.
They have to jump around to keep other projects moving along… And you’re just another job in the rotation.
So it’s not a surprise that it could take several weeks, or even months, to get your custom outdoor kitchen built.
You know what that means.
Yep, your backyard is likely to be in shambles for quite some time. And if you’re undergoing this project during the spring or summer… You’re likely to miss a good chunk of peak barbecue season, too.
If you have an expansive outdoor living space… This intrusion might not be as bothersome to you.
But for most of us, this could prove to be quite an unwelcome disturbance!
Communication May be Spotty
Piggybacking on the concept of extended timelines… Since your contractor is so busy, you’ll likely have a hard time getting in touch with them.
Most of the time, your contractor is quite literally a one man band… And it’s pretty much inevitable that a ball will get dropped somewhere along the line.
And generally speaking… Communication is the first thing that’ll drop off.
So if you’re 3 weeks into your custom outdoor kitchen project, your backyard’s disturbed, and you’ve sent several unanswered messages to your contractor… Things can start to feel a little dicey.
Do things usually work out in the end? Yes.
But that’s a whole lot of unnecessary stress and headaches to put yourself through. You shouldn’t have to pull teeth to get answers on a $10,000+ custom outdoor grill station.
Material Quality can be a Concern
Just like any other company, a contractor wants to earn your business. And a common strategy to do this is by offering the lowest possible price.
And where is that price cut happening?
Materials.
Although we’ve already told the cautionary tale about wood from a safety perspective… That’s not the only issue with this material.
In the outdoor environment, wood is susceptible to rotting, warping, swelling, and termite damage. Safety concerns aside, it won’t be long before your wood outdoor kitchen starts showing signs of aging.
Alternatively, your contractor may use a metal framed outdoor kitchen. Metal frames will form the core, be covered with cement board, layered with a cladding material, and the finish will be layered on top of that.
It may sound like a significant upgrade… But there’s still some systemic problems here.
Metal frames are prone to rust and corrosion, particularly if you live in a coastal or northern climate. Left unchecked, your outdoor kitchen can end up with severe structural damage.
But that’s not even the only problem.
These materials also take a toll on your finish. You’ll often encounter issues with tiles or stone popping off… And even cracking stucco. All of which allow moisture to get directly into your island and wreak even more havoc.
So, what’s left?
Your best bet is to find a contractor who works with concrete block, brick, or stone. Unfortunately, it’s tough to find someone with the skill… And the price for an outdoor custom kitchen like that can get exorbitant really quickly.
Warranties go by the Wayside
To top it all off… Contractors tend to be a bit wary of warranting their workmanship.
We need not remind you that a custom outdoor kitchen is a huge investment.
So isn’t it only reasonable to expect some sort of warranty? We’d like to think so.
Because if anything goes wrong with your outdoor kitchen… You’ll be on the hook for it. (Repairs aren’t cheap!)
Before you sign the dotted line… Be sure to get a warranty on record.

Burgers and Hot Dogs
Let’s be real – the classics are classics for a reason. Between juicy burgers and sizzling hot dogs, you can’t help but enjoy watching the game (even if your team isn’t doing so sizzling hot). For the ultimate burger and dog result, we recommend trying out Ryan Shazier’s burger recipe:
What you’ll need:
- 100% Grass Fed Ground Beef (2lbs)
- 3TBSP Worcestershire Sauce
- 2 Eggs
- Salt / Pepper
- ¼ C Breadcrumbs
- BBQ Aioli
- ½ C Mayo
- ½ C Barbeque Sauce
- 1 tsp red pepper flakes
- 1 tsp garlic powder
- 1 tsp minced garlic
- 1 tsp smoked paprika
- 1 tsp apple cider vinegar
- Sharp Cheddar Cheese (Melted on burger)
- Leaf Lettuce
- Purple Onion
- Crispy Onions
- Pickled Jalapenos
- Sesame Seed Bun
Prep:
- 1. Cook burger medium
- 2. Toast Bun on Coyote Grill
- 3. Add BBQ Aioli to both sides of the bun, add beef patty, lettuce, purple onion, crispy onions, pickled jalapenos, BBQ aioli
BBQ Ribs
When you place the ribs on the grill, your guests will know you mean business. Try our favorite grilled rib recipe below!
What you’ll need:
- 2 racks of ribs (Pork or Beef depending on your preference)
- Dry Rub
- 1 TBSP Cumin
- 1 TBSP Smoked Paprika
- 1 TSP Cayenne
- 2 TBSP Brown Sugar
- 2 TBSP Salt
- 1 TSP Black Pepper
- 1 TBSP Onion Powder
- 1 TBSP Garlic Powder
- BBQ Sauce
Prep:
- Pull the ribs from the refrigerator 15 minutes before grilling so the meat doesn’t get shocked when placed on heat
- Rub all sides of the ribs with dry rub
- Place the ribs on the grill (meat side down), then grill and cook the ribs covered for 45 minutes
- Brush the ribs with BBQ sauce and then flip the ribs over before brushing on more sauce
- Cook the ribs bone side down for 10-15 minutes
- Remove from the grill and cover for 10-15 minutes
Rotisserie Chicken
When has chicken ever been a bad idea? We don’t know too many people who would turn down a grilled Rotisserie Chicken on game day. Try this savory recipe out!
What you’ll need:
- One 3 ½ lb to 4 lb whole chicken
- 2 TSP Fine Sea Salt
- 2 TSP Watkins Organic Poultry Seasoning
- 1 Lemon
- 1 ½ lb Baby Potatoes
- 2 Medium Onions cut into wedges
Prep:
- Pat the raw chicken dry with paper towels and remove any giblets from the inside cavity
- Evenly rub the sea salt over and under the skin and then evenly distribute the seasoning throughout the chicken
- Put the chicken on a plate and leave uncovered in the refrigerator for at least 4 hours, up to overnight
- Pat the chicken dry again and insert the spit through the cavity
- Truss the chicken with butchers twine (use a piece of twin 4x longer than the length of the bird) while it is on the spit
- Make sure the bird is centered on the spit, then tighten the second fork to lock the bird in place. Squish one-half of the lemon into the cavity.
- Insert into the grill on the highest rotisserie placeholder. Place an aluminum pan with your potatoes and onion directly underneath the chicken. Sprinkle potatoes and onions with salt and pepper.
- Turn the rear infrared burner of your Twin Eagles Grill to high and start the rotisserie by pushing the button on the right-hand side of the grill (it should rotate freely)
- Sear on high with the cover open for 30 minutes, then poke a few holes in the skin to let the juices start running out of it gently. Cook on high for 20 more minutes, then turn off the infrared burner.
- Use a spatula to mix the potatoes and onion, cooking them with juices and fat that drip down from the chicken.
- Turn the left and right burners on low and close the lid, keeping the rotisserie on. You’ll cook the chicken at around 300-325 degree until the internal temperature of the thickest part of the breast is around 165 degrees.
- Finish crisping the skin by turning the side burners off and turning the infrared rotisserie back on until the skin is deep golden brown and the thickest part of of the breast is 180 degrees.
Grilled Veggies and Skewers
If you have guests who prefer a lighter option, grilled veggies and steak skewers are a perfect choice! Try this easy, quick, and tasty recipe!
What you’ll need:
VEGGIES:
- 2 Portabello Mushrooms
- 1 Eggplant
- 1 Zucchini
- 1 Yellow Squash
- 1 Onion
- 1 Bunch Thick Asparagus
- 1 Red Bell Pepper
- 2 TBSP Extra Virgin Olive Oil
- 1 TBSP Kosher Salt
- 1 TBSP Freshly Ground Pepper
Prep:
- Preheat the grill to 350 – 450 degrees
- Cut eggplant, zucchini, yellow squash, and onion into ⅓” to ½” slices. Cut red bell pepper into quarters and trim the ends of the asparagus
- Drizzle veggies with olive oil and sprinkle salt and pepper
- Grill veggies with the lid closed until tender and lightly charred over (about 8-10 minutes for peppers, onion, and mushrooms and 5-7 minutes for yellow squash, zucchini, eggplant, and asparagus)
STEAK SKEWERS:
- ½ C Olive Oil
- ½ C Soy Sauce
- 3 Cloves Minced Garlic
- 1 TSP Black Pepper
- 2 lbs Sirloin Steak (cut in 1 inch cubes)
- 8 Metal Skewers
Prep:
- Whisk together olive oil, soy sauce, garlic and pepper
- Add the cubed sirloin steak to marinade and toss to coat. Cover with plastic wrap and let marinate for 30 minutes – 1 hour
- Thread cubed steak onto the skewers
- Grill kebabs on medium heat (turning often) until all sides are well brown, about 12-15 minutes
Appetizers
Last but not least, you can’t forget about the appetizers! While everyone waits for the main course, whip up a quick and easy snack such as:
GRILLED SWEET POTATO NACHOS
What you’ll need:
Nachos
- 2 Large Sweet Potatoes
- 1 TBSP Olive Oil
- 1 TSP Chili Powder
- 1 TSP Cumin
- 1 14 oz. Can Refried Beans
- 1 C Frozen Sweet Corn
- 3 oz. Multigrain Tortilla Chips
- Chopped Cilantro (for topping)
- Crumbled Cotija Cheese (for topping)
Cheese Sauce
- ½ TSP Butter
- 1 Large Clove Minced Garlic
- 1 ½ C Milk
- 2 TBSP Flour
- ¼ TSP Salt
- ½ C Shredded Cheese
Prep:
- Turn grill on medium-high heat
- Wash sweet potatoes and pierce with a fork. Wrap them in a paper towel and microwave on high for 4 minutes
- When cool enough to handle, cut sweet potatoes into wedges and toss with olive oil, chili powder, and cumin (and salt to taste)
- Transfer sweet potatoes to grill and cook for a few minutes on each side until roasted
- While cooking, heat the refried beans on the stove or in the microwave until warmed through, and roast the corn in a dry nonstick skillet until golden brown
- Arrange chips in a single layer and top with sweet potato wedges, black beans, and corn
- Melt the butter in a small saucepan. Add the garlic and saute for 1-2 minutes.
- Add ¾ cup milk and heat until simmering.
- Add the remaining ¾ cup of milk with flour and then add to the saucepan and stir until smooth and thick
- Remove from heat and whisk in the salt and cheese until melted
- Drizzle the cheese sauce over the nachos and top with cilantro and Cotija cheese

If you have been part of the football season culture for even a short period of time, you know the party doesn’t stop when the temperatures drop. In fact, that’s when the excitement starts to heat up. So the question is: How do I homegate in the winter?
Can a Grill Stay Outside in Winter?
Whether you’re preparing for the Super Bowl or Rose Bowl or somewhere in between, we have good news for you. You can absolutely grill in the winter! Just be sure to
- Give your grill a little extra time to warm up in colder temperatures.
- Have extra fuel for the grill. Cold temperatures may cause your grill to need a bit more of a boost!
- Keep your grill lid closed as much as possible (keep the hot air in!)
- Have a warm pan ready to transfer your meat onto once it’s done.
How to Store a Grill in Winter
If you decide to hang up your tongs and grilling apron for the winter months, make sure you’re storing your Coyote grill correctly so it’s ready for use come spring.
Prep your grill for winter hibernation by:
- Cleaning it thoroughly: Deep clean your grill gates and coat them with a high heat oil. If your grill has a grease cup, make sure you empty it. Remove the ignition battery from your electric starter if your grill has one.
- Winterize it: Protect your grill from potential pests by cleaning any venturi and tube burner it might have. Wrap them in plastic to prevent pests from entering.
- Store it: Once your grill is clean and winterized, select a properly sized grill cover to protect your grill from the elements and pests. Store the grill in a dry, cool, and covered place. If you’re storing a gas grill, be sure to disconnect and remove the propane tank.

10 Tips for How to Grill in the Winter Like a Pro
Labor Day has come and gone, the summer and fall seasons are over and it’s time to retire your grill for the year, right?

Even though winter is upon us, you don’t need to deprive yourself of all your favorite grilling recipes. In fact, grilling during the winter months brings friends and family together. When the temperature drops and snow starts falling, it is time to cook foods that warm the soul.
That said, winter weather can present some challenges to even the most seasoned grill masters. Luckily for you, we’ve compiled some veteran winter grilling tips and tricks that will help keep you safe and warm and enable you to deliver on your reputation as a world-class grill master all year long.
1. Shovel Your Grilling Space Ahead of Time
When grilling, safety should always be your top priority. If you’re planning on grilling with layers of snow in your path to and from the grill, make sure to shovel the entire space before you get to work. This will help prevent dangerous slips and spills and can help you avoid complications when going between your grill and your living space.
It’s also imperative that you shovel out any snow that’s accumulated under your grill, as your grill should always be operating on stable and level ground.
2. Set Up Proper Outdoor Lighting
Winter months mean earlier nights and snowfall that can cloud your vision. Since visibility is key to safe and effective grilling, you should always ensure that your grilling area is properly lit.
This doesn’t require anything extensive. Any type of outdoor lighting fixtures should suffice so long as the entire area is well lit to help you avoid mistakes that can be dangerous or detrimental to your end product.
3. Dress Warm and Wear Grilling Gloves

There’s nothing worse than taking your food from grill grate to cold plate and having your meal run cold by the time you get a chance to enjoy it.
