    The Coyote Electric Grill

    A great option for urban grill masters, or those with limited space, is an electric grill which heats up fast, is easy to clean, and you don’t need any fuel, just a nearby outlet.     Leslie has a devoted following who have accompanied her on her journey to lovingly remodel a home, built in 1915, where her husband was raised. A few years later they added a pool and remodeled their master bedroom, two upstairs baths, and the third-floor attic. Their last major remodel was to update the art studio (The Carriage House) and an outdoor kitchen. The authentic nature of the remodeling projects is described by Leslie, “We have always preserved the architectural integrity of our home so we have been lucky. Our seventeen-year-old remodel is still in style.”

    What are the three keys things to consider when choosing or planning an outdoor kitchen?  Most customers and many of the contractors building their jobs have never had an outdoor kitchen. The outdoor kitchen space is much different that owning a cart grill with side shelves. It is just like the indoor kitchen; it will become a gathering place for friends and family. We always recommend creating an area that invites guests into the cooking space and ideally allows for a center island or a seating area adjacent to the grill. We ask customers what they like to cook. How do they envision using the area? Will they need refrigeration? The most overlooked item in an outdoor kitchen is counter space.

    What is it that appeals to your customers about Coyote grills?  Our customers love Coyote grills because of the high BTUs, they are attractive, and it has a great sear burner option. They LOVE LOVE LOVE the laser cut grate options. Customers who like to cook fish and vegetables are hooked immediately on this option. Also, customers like that they can get ceramic briquettes.

    Why are outdoor kitchens becoming more and more popular?  Outdoor living spaces in general have become more popular. This used to be a feature found only in homes with year-round outdoor living climates – like California & Florida. Outdoor kitchens are a sought-after feature in an outdoor living space. Adding a kitchen and a fire feature to any back yard completely changes the way an area is used. It becomes your house outdoors and people can’t get enough of it. Once someone has experienced an outdoor kitchen at a friend’s house – they want one!

    It is a family business, tell me one thing about you as a family that nobody knows, and people would find interesting?  People always marvel at all of us working together. How do you do it? That must be crazy! Do you guys argue?  The answer is simple. We are a family first and business owners second. Each person in this business, just like our family, brings unique qualities and strengths to the table. Being a West Virginia gal, I always loved the Farm Bureau slogan, “We pull the most when we, pull together.”

    For July 4th festivities, there is no need to be boring. To accompany the traditional fare of hamburgers, hot dogs and chicken, why not add a spectacular appetizer like these cremini mushrooms on charred toasts with ricotta. These hors d’oeuvres were made by award-winning chef, Jonathan Collins on the Coyote Asado Cooker.

    We are sharing to encourage all Independence Day revelers to try a new culinary dish this July 4th or at any other grilling event during the summer. Please find the recipe below:

    GRILLED CREMINI ON CHARRED TOASTS WITH RICOTTA
    SERVES 4

    INGREDIENTS
    Cremini Mushrooms – brushed clean, stemmed 1lb 450g
    Fresh Asparagus – pared into long thin slices 8pc
    Fresh Thyme – rinsed and leaves stripped 1tbsp
    Lemon – zested and juiced 1pc
    Ricotta Cheese 2cups
    French Baguette or Country Bread – sliced on 45° angle in 1” thick slices 1pc
    Extra Virgin Olive Oil – plus more for brushing 3tbsp
    Flaked Sea Salt to taste
    Fresh Ground Black Pepper to taste

    TECHNIQUE
    1. Combine mushrooms, olive oil, thyme, lemon zest and juice in a medium mixing bowl, cover
    2. Marinate for 2 hours at room temperature
    3. Position rack in center of Asado Cooker, preheat to 350°F (176°C)
    4. Arrange mushrooms on the grill, top-side down, season with salt and pepper
    5. Grill until nicely charred, turn, brushing with marinade occasionally
    6. Brush bread with olive oil, arrange on the grill, season with salt and pepper, grill until nicely charred, turn
    7. Spread a thick layer of ricotta on toasts, press mushrooms into ricotta, top with pared fresh asparagus
    8. Keep warm on the upper-rack or cooler edges of the Asado Cooker

    With this delicious appetizer, refresh yourself with one of Chef Collins Ginger Lime Caipirinhas!

    GINGER-LIME CAIPIRINHAS
    YIELDS 1

    INGREDIENTS
    Cachaça (distilled spirit from sugar cane) 60ml (2oz)
    Fresh Ginger – peeled and sliced ¼” pc
    Lime – rinsed and quartered, plus thin wedges for garnish 1pc
    Raw or Turbinado Sugar 2tsp

    TECHNIQUE
    · Add fresh ginger, a quartered lime wedge and sugar in a rock glass
    · Using a muddler press down and twist the ginger, and limes to release the juice and the oils from the peel
    · Add crushed ice, pour Cachaça over ice and stir, squeeze a lime wedge into glass and serve

    Leslie Saeta, founder of the engaging Instagram account @my100yearoldhome, recently featured the Coyote Electric Grill on a pedestal in a beautiful oceanside setting. As noted in the post, “We have a balcony off our kitchen at the beach house and I finally found the right sized barbecue that fits.” The Coyote Electric Grill is 18” wide and has a 156 square inch cooking area. I love that it has a 60 minute safety timer with a surge protector too.” The compact Electric Grill on a Pedestal makes holiday grilling possible in smaller unique spaces. Leslie adds,”It’s time to be thinking about your Memorial Day plans. Make sure you are all set for lots of grilling outdoors. I think I might have some barbecue volunteers with this amazing view!”

    Leslie has a devoted following who have accompanied her on her journey to lovingly remodel a home, built in 1915, where her husband was raised. They purchased the home in 1969 and have shared the redesign of the kitchen, family room, two downstairs baths and the outdoor patio. A few years later they added a pool and remodeled their master bedroom, two upstairs baths, and the third-floor attic. Their last major remodel was to update the art studio (The Carriage House) and an outdoor kitchen. The authentic nature of the remodeling projects is described by Leslie, “We have always preserved the architectural integrity of our home so we have been lucky. Our seventeen-year-old remodel is still in style.”

    Mother’s Day Grilling Guide

    At Coyote Outdoor Living, we believe that coming together to cook and enjoy the outdoor experience is one of the ingredients that enhances family life. Grilling is the perfect way to celebrate Mother’s Day with wholesome, healthy recipes that everyone will enjoy.

    Here a family, with a smaller but well-designed outdoor area, is gathered around the electric grill which is a great solution for condo-owners or those with limited space.

    For families looking to grill on Mother’s Day, below are two entrée choices for chicken or fish lovers and a simple, yet delicious dessert that will surprise the Mom in your life.

     

    GRILLED TERIYAKI CHICKEN KABOBS

    Ingredients:
    Marinade:

    • 1/3 cup soy sauce
    • 1/3 cup brown sugar
    • 2 tablespoons vegetable oil
    • 1 teaspoon ground ginger
    • ½ teaspoon garlic powder
    • 2 tablespoons honey
    • 1 teaspoon seasoning salt

    Meat:

    • 1 lbs boneless skinless chicken thighs cut into 32 1 to 1 – ½ inch pieces

    Veggies:

    • 12 fresh mushrooms (whole)
    • Small zucchini, cut into 8, 1 inch pieces
    • Large peppers, cut into pieces
    • Large Onion, cut into wedges
    • 12 cherry tomatoes

    Instructions
    Combine all marinade ingredients in a large, resealable plastic food bag. Reserve 2 tablespoons marinade; set aside. Add chicken pieces. Tightly seal the bag. Turn bag several times to coat chicken well. Place in 13 x 9-inch pan. Refrigerate, turning occasionally, about 3 hours. Refrigerate reserved marinade.
    When ready to grill, drain the meat and discard the marinade. On metal or soaked wooden skewers, alternate meat, pineapple, mushrooms, zucchini, green pepper, onion, and tomatoes.
    Place kabobs onto grill. Grill, turning and brushing occasionally with reserved marinade until chicken reaches at least 175°F. or until juices run clear when pierced with a fork (15 to 20 minutes). This recipe yields 8 kabobs.

    GRILLED SALMON SALAD WITH WARM BLUEBERRY VINAIGRETTE

    • 2 salmon fillets (~6oz each)
    • 1 tsp olive oil
    • 1 tbl minced garlic
    • 1 tbl coconut oil
    • 1 tbl balsamic vinegar
    • 1/4 fresh blueberries (or frozen that are thawed)
    • 1/2 tsp grated lemon zest
    • 1/2 tsp sugar
    • 2 cups salad greens
    • salt & pepper

    Instructions:
    Preheat grill to medium-high.
    Rub salmon with olive oil and mince garlic, then season lightly with salt and pepper. Grill salmon until it is opaue and flaky. About 6 minutes per side (depending on how thick the fillets are).
    While salmon is cooking, add coconut oil in a medium-sized saucepan over medium heat to melt. Add in vinegar, blueberries, and sugar. Let cook for about 30 seconds to 1 minute or until the blueberries are soft. Add in lemon zest.
    Serve salmon over a bed of greens and top with blueberry sauce and a little more fresh grated lemon juice. This recipe is for two so double for 4 people.

    GRILLED PEACHES

    For dessert, this recipe is simply delicious! it is a very healthy offering with only two ingredients. Of course, vanilla ice cream can certainly be added on top!

    • 4 medium sized ripe but firm peaches
    • 2 tablespoons coconut oil

    Instructions
    1. Pre-heat your grill.
    2. Half the peaches and remove the seeds.
    3. Melt the coconut oil.
    4. With a pastry brush, lightly brush the peaches all over.
    5. Place face side down on the BBQ, turning in 4-5 minutes and there are clear grill marks on them.
    6. Turn the peaches over and grill for another 4-5 minutes or they are tender.
