Prepping For Your Tailgate
The role of the tailgate grill master comes with responsibility.
While it can be a lot of work to host friends, family and fellow fans, the payoff is well worth it. But it doesn’t have to be a hassle. With a little preparation, your pregame tailgate can be nothing but smooth sailing.
First, coordination is key. Many hands make light work, and by divvying up responsibility you can expand the menu without running yourself into the ground. When coordinating invitations, hand out responsibilities on what to bring — from napkins, utensils and plates to prepared dishes and drinks — to help spread out costs and labor. Adding a potluck feel to your tailgate is a great icebreaker for guests to get to know one another and helps everyone feel like part of the team.
Put some thought into tailgate drinks. While canned brews are a tried-and-true favorite, you can also try batched cocktails for a personal touch. Bloody Maries are a great option for early kickoffs, sangria is an excellent choice for warm days and mulling wine on the grill is a great way to help warm up guests before night games as the weather turns from brisk to outright cold.
Next, let’s emphasize the importance of food safety. Preventing your tailgate from getting sick is the solemn responsibility of the host. Make sure you keep hot foods hot, and cold foods cold. Do this by having not one, but three coolers — one for beverages, one for unprepared foods and one for chilled read-to-eat food. That way you can fine-tune temperatures and prevent cross contamination — nobody wants raw chicken-thigh flavored cocktail ice! Plus, keep a space for warm foods — a hot station can be an enclosed box, some steno burners or a top section of the grill.

Newbies might think they’re tougher to skip H20 for another brewski, but those of us who have a few more hot end-of-summer afternoon kickoff games under our belts know how that ends. You can easily throw all of these ingredients together the night before in an aluminum grilling pan and cover with foil. Then, you can forget about it until you’re ready to throw it on the grill to heat up the combo to melty perfection. After 45 minutes, you’re friends and fellow fans will be ready to devour your stash of tortilla chips!
This recipe also offers a great chance for variety. You can mix-and-match ingredients and toppings so that no two quesos taste the same.
Bo’s Land and Seo Burger: Created by Bo Jackson with Chef Chad Wyrosdick of Papa’s Raw Bar in Lighthouse Point, Florida, this recipe is sure to impress. With angus beef and lump crab meat, it’s the perfect surf-and-turf for the astroturf.
Ingredients (Makes one burger):
- 8 ounces Bo’s Burger – Seasoned Angus Burger
- 1 pinch rock sale
- 1 pinch ground black pepper
- 2 slices tomato
- 1 leaf lettuce
- 3-ounce wedge of drunken goat cheese
- 2 thin slices prosciutto
- ½ pound ProCrab All-Natural Mexican Jump Lump Crab Meat
- 1 bread bun
Instructions:
While the grill preheats, butter the inside of both sides of the bun, and lightly sprinkle each side of a Bo’s Burger patty with rock salt and pepper. Remember, the patties come seasoned, so less is best.
Place the patty on the hot grill and cook for about 3 minutes on each side for medium rare.
During the last minute, place the bun on the grates, butter-side down, to toast. Watch carefully. When golden, remove and set aside.
Top the patty with the goat cheese and let the cheese melt.
Remove the cheeseburger from the grilling grates and place on the bottom bun. Add prosciutto, top with the crab meat, tomato slices, lettuce leaf and sauce of your choice. (We prefer Chef’s house-crafted Hollandaise sauce.)

Coyote Responds to “Grilling is Bad” Article
“Admit it: Grilling is Bad” Response by a Grill Company
We recently stumbled across an article by Business Insider contributor and absolute killjoy, Josh Barro, titled “Admit it: Grilling is bad.” The op-ed stated that “just because you can cook outside doesn’t mean you should” and that “indoor cooking is better – which is why that’s the main way you cook.”
The article was met with an onslaught of angry grillers who couldn’t understand why someone would want to “cancel” grilling. We’re starting to think that this guy is either really good at trolling or has been seriously jaded by charcoal grills in the past, but the fact of the matter is that Josh Barro is cooking on the wrong grill.
Gas and charcoal grills have always been the top dogs when it comes to grilling. Gas grills are a fan favorite because you can control the heat and charcoal because of the smoky flavor. However, the biggest buzz this year was about pellet grills. Pellet grills are the best of both worlds offering both full control of the temperature with added enhanced flavor from wood pellets. The pellet grill from Coyote Outdoor Living has next generation features that really revv up the grilling experience so it feels like you have transported your indoor kitchen outdoors.
Let’s break down Josh Barro’s top points and dispel the rumor that grilling is ‘bad’.
“Your grill is filthy”
Every time you grill, you’re putting your new food right on top of the burned old food from last time, so it crusts onto your new food. Ew.
You’re going to have to try harder than that to convince people that the rich, juicy flavor of last week’s burgers doesn’t make this week’s asparagus that much better. Think of it as you would the griddle tops at your favorite breakfast diner. The eggs of today would not be the same without the potatoes and bacon of 1970. In all seriousness, most people clean their grills after every use by scrubbing the hot grates with a brass-bristle brush. The laser cut grill grates on the Coyote Outdoor Living pellet grill can be cleaned with a brush and, once cool to the touch, can be scrubbed down with a mild detergent making it just as clean a surface as the pans in your kitchen. Our pellet grill takes more upkeep than your average gas or charcoal grills but maintaining it is extremely easy to do. If you’re worried about the “filth” of the grill, we can assure you that you won’t have that issue here.
“Your grill has poor temperature control”
…Grilling is more likely to lead to overcooking or undercooking your meat than cooking in the kitchen.
We’ll give him this one. Your traditional gas or charcoal grills really don’t compare to the indoor stove when it comes to temperature control. However, skilled grillers know that having a good temperature probe is key when it comes to cooking outside. Additionally, you can open dampers and adjust the vent as you go. We know for a fact that our pellet grills have excellent temperature control seeing as they were built with an intuitive digital touch control to literally bring the temperature up from 175 to 700 degrees Fahrenheit and everything in between. Most pellet grills don’t go beyond 500 degrees. We also use Smart Drop™ technology to increase fuel efficiency and burn an average of 1lb of pellets per hour of grilling making it easy to cook your food evenly. We also have three inputs for food probes so that you can actually read the internal temperature of the meat. If you’re under or overcooking meat outside on the pellet grill, you’re probably going to do the same in your kitchen.
“Grills have the heating element under the food, which is stupid”
Unlike skinless chicken, fatty meats can withstand the grill’s heat because the fat keeps them moist. But there’s a problem: Grease from the meat drips down into the heating element, causing flare-ups.
We understand how someone could run into major flare-ups during amateur hour, but real grill pros know how to deal with drippage. When grilling, it’s important to know these three rules:
- Keep the lid shut
- Move the meat
- Do not poke the meat
By keeping the lid shut, you cut off any oxygen from the fire causing the flame to die down. Moving the meat to a more indirectly heated spot can also help to avoid any additional dripping. Not only does poking and prodding meat cause the meat to dry out, it also seeps the juice directly into the flames. Don’t touch it. But while we’re on the topic, we should probably also mention that our pellet grill has two drip trays below to catch any juice that could potentially be an accident waiting to happen. Our pellet grill hood also has a gasket seal all the way around the lid to ensure we keep in the smoke and heat. And so you don’t completely lose the thrill of searing your food on direct, high heat like you might with gas, charcoal and even other pellet grills, we have an additional sear grate that you can put on your grill to ensure your food comes out exactly how you want it.
“You secretly agree with me about grilling”
You may talk a good game about how you like to grill, but where do you do most of your cooking? Almost surely in the kitchen, where cooking is easier and cleaner and produces more consistent results.
Apparently this guy’s never met a die-hard griller before who will grill their Christmas ham outside in 20 degree weather. Plus, those who live in warmer climates tend to grill a lot more than those who live in colder weather. The Fort Lauderdale International Boat Show runs from Wednesday, October 30th through Sunday November 3rd. Presented by Informa Exhibitions and The Marine Industries Association of South Florida, the event takes place at several marinas and yachting centers as well as the Greater Fort Lauderdale/Broward County Convention Center. This is the world’s largest in-water boat show with more than 1,500 boats on display and spans more than 3 million square feet across seven locations.
This is the first time that Coyote Outdoor Living will be an exhibitor at the International Boat Show. Several grills will be shown including the 30″ Inch S-Series Grill on a Cart, the Coyote Electric Grill and the new Portable Gas Grill that will be of special interest for boaters.
The Coyote Portable Gas Grill is made of superior quality 316 marine-grade stainless steel and includes Coyote’s signature grate as an added
enhancement. The product can be used with either a 20 lb. propane tank or a small disposable propane tank and has up to a 20,000 BTU of output. This model comes with an adapter for smaller tanks and a cover is also available. The new Coyote portable gas grill is a high-end compact product perfect for boaters, tailgaters, road trip enthusiasts and for those with reduced patio space.
The other portable product that has been highly touted in the industry, is the Coyote Electric Grill. For July 4th festivities, there is no need to be boring. To accompany the traditional fare of hamburgers, hot dogs and chicken, why not add a spectacular appetizer like these cremini mushrooms on charred toasts with ricotta. These hors d’oeuvres were made by award-winning chef, Jonathan Collins on the Coyote Asado Cooker.
We are sharing to encourage all Independence Day revelers to try a new culinary dish this July 4th or at any other grilling event during the summer. Please find the recipe below:
GRILLED CREMINI ON CHARRED TOASTS WITH RICOTTA
SERVES 4INGREDIENTS
Cremini Mushrooms – brushed clean, stemmed 1lb 450g
Fresh Asparagus – pared into long thin slices 8pc
Fresh Thyme – rinsed and leaves stripped 1tbsp
Lemon – zested and juiced 1pc
Ricotta Cheese 2cups
French Baguette or Country Bread – sliced on 45° angle in 1” thick slices 1pc
Extra Virgin Olive Oil – plus more for brushing 3tbsp
Flaked Sea Salt to taste
Fresh Ground Black Pepper to tasteTECHNIQUE
1. Combine mushrooms, olive oil, thyme, lemon zest and juice in a medium mixing bowl, cover
2. Marinate for 2 hours at room temperature
3. Position rack in center of Asado Cooker, preheat to 350°F (176°C)
4. Arrange mushrooms on the grill, top-side down, season with salt and pepper
5. Grill until nicely charred, turn, brushing with marinade occasionally
6. Brush bread with olive oil, arrange on the grill, season with salt and pepper, grill until nicely charred, turn
7. Spread a thick layer of ricotta on toasts, press mushrooms into ricotta, top with pared fresh asparagus
8. Keep warm on the upper-rack or cooler edges of the Asado CookerWith this delicious appetizer, refresh yourself with one of Chef Collins Ginger Lime Caipirinhas!
GINGER-LIME CAIPIRINHAS
YIELDS 1INGREDIENTS
Cachaça (distilled spirit from sugar cane) 60ml (2oz)
Fresh Ginger – peeled and sliced ¼” pc
Lime – rinsed and quartered, plus thin wedges for garnish 1pc
Raw or Turbinado Sugar 2tspTECHNIQUE
· Add fresh ginger, a quartered lime wedge and sugar in a rock glass
· Using a muddler press down and twist the ginger, and limes to release the juice and the oils from the peel
· Add crushed ice, pour Cachaça over ice and stir, squeeze a lime wedge into glass and serveEnjoy!

Leslie Saeta, founder of the engaging Instagram account @my100yearoldhome, recently featured the Coyote Electric Grill on a pedestal in a beautiful oceanside setting. As noted in the post, “We have a balcony off our kitchen at the beach house and I finally found the right sized barbecue that fits.” The Coyote Electric Grill is 18” wide and has a 156 square inch cooking area. I love that it has a 60 minute safety timer with a surge protector too.” The compact Electric Grill on a Pedestal makes holiday grilling possible in smaller unique spaces. Leslie has a devoted following who have accompanied her on her journey to lovingly remodel a home, built in 1915, where her husband was raised. They purchased the home in 1969 and have shared the redesign of the kitchen, family room, two downstairs baths and the outdoor patio. A few years later they added a pool and remodeled their master bedroom, two upstairs baths, and the third-floor attic. Their last major remodel was to update the art studio (The Carriage House) and an outdoor kitchen. The authentic nature of the remodeling projects is described by Leslie, “We have always preserved the architectural integrity of our home so we have been lucky. Our seventeen-year-old remodel is still in style.”
