    Korean Spicy Pork Belly

    Quick 7 Super Flavorful Pellet Grill Recipe

    • Pellet Grill
    • 1/4 cup Soy Sauce
    • 1/4 cup Brown Sugar
    • 2 tbsp Salt
    • 2 tbsp Sesame Oil
    • 2 tsp Sugar
    • 2 ea Cloves of Garlic (Minced)
    • 1/2 cup Ko Chu Jang ((Hot Pepper Paste))
    • 2 lbs Pork Belly (Sliced 1/4 Inch)
    • 1 ea Green Oinion (Sliced into 1/2-inch pieces)
    1. Combine soy sauce, malt syrup, salt, sesame oil, sugar, and garlic, and pepper paste to make marinade

    2. Marinate pork in spicy soy sauce mixture about 4 hours to overnight.

    3. Grill meat over medium-high heat (375-400) until thoroughly cooked, 10-20minutes. Season with salt and pepper to taste. Garnish with green onion if desired.

    Spatchcock Roast Chicken With Shallot & Tarragon

    Family Dinner Roast Chicken with Shallots and Tarragon

    • Pellet Grill
    • 3-4 lbs Whole chicken
    • 2 tsp Kosher salt (Plus more to taste)
    • 1/2 tsp  Freshly ground black pepper (Plus more to taste)
    • 3 ea Medium shallots (Quartered)
    • 6 ea Medium cloves of garlic (Crushed)
    • 2-3 ea Tarragon springs plus 1 tbsp. (4 g) chopped tarragon, divided
    • 4 tsp Unsalted butter. 2 tbsp (28 g) softened, remaining 2 tbsp. (28 g) chilled and cut into 2 pieces, divided
    • 1 ea Pan spray

    Bed of Vegetables

    • Carrots
    • Brussels
    • Purple yams or potatoes

    The Day Before Serving

    1. The day before serving, generously season the inside of the bird with the salt and pepper, then place the shallot quarters, garlic and tarragon sprigs in the cavity of the chicken.

    2. Take the 2 tablespoons (28 g) softened butter with gloved hands and rub the bird generously inside and out, covering the bird with a thin coating. Season generously with salt and pepper. Gather the skin on both sides of the cavity and thread a bamboo skewer through flaps of skin to sew it the best you can. Don’t worry about trying to make a surgical stitch. Place on a parchment-lined half sheet pan. Refrigerate overnight, uncovered, to allow the skin to air-dry.

    One Hour Before Roasting

    1. One hour before roasting, take the chicken out of the refrigerator to allow it to come up to room temperature. Adjust pellet grill rack to the lower-middle position and preheat to 375 degrees F (190 degrees C). Spray a roasting rack with cooking spray and set in a half sheet pan or other roasting pan.

    The Roast

    1. Roast the chicken for 40 to 50 minutes, or until the thickest part of the thigh registers 165 to 170 degrees F (74 to 77 degrees C) on an instant-read thermometer. Carefully remove the pan from the oven; tip the bird to let the juices from the cavity run into the roasting pan. Transfer the chicken to a cutting board and let rest, uncovered, while making the sauce. Let the liquid rest so that the fat floats to the top, and pour off as much of the fat as possible.

    2. Place a small saucepan over medium heat. Pour the reserved chicken juices and bits into the saucepan and bring to a boil. Reduce the sauce until thick, rich and brown in color. Add the remaining 1 tablespoon (4 g) of chopped tarragon and whisk in the remaining 2 tablespoons (28 g) butter until it melts and makes a sauce. Taste and adjust the seasoning.

    3. Break down the chicken into your desired pieces or cuts. You can roast under the broiler until the skin is crispy, if desired; serve hot with the warm pan sauce.

    Chef Tip

    1. “Dry brining” simply means seasoning the bird and letting it marinate rather than submerging it completely in a saltwater solution. Air-drying in the fridge uncovered helps make the skin super golden brown and delicious.

    MAKING THAT DREAM INTO A REALITY

    Picture this – it’s the middle of June, 3:34 PM on a Saturday. It’s sunny with a warm breeze, and you’re preparing to host your favorite people in your dream backyard, custom designed and built to include everything you need for the perfect night. Life is good.

    Back to reality. It’s late winter, rainy, probably a weekday, and your dream backyard is still nothing but a dream. You know what you want for your outdoor space, but what’s next? From landscaping, amenities, and designer options, you can dive into your outdoor design project in many different ways. Let’s take a deeper dive into the world of landscape plans, renderings & drawings to assist in planning your outdoor design project this year!

    Consider an outdoor kitchen for your next outdoor design project

    PLANNING THE DREAM

    Landscaping can create a functional and beautiful outdoor living space that complements the existing architecture of your home as well as new outdoor design additions like an outdoor kitchen or pool. When planning your project, consider your overarching goal for your backyard greenery and the current state of your landscaping. Will it serve as functional or just as decoration, or maybe a mix of both? What is currently in your space that you’ll have to work around? 

    Consider these steps when designing your landscaping:

    Brainstorm, brainstorm, brainstorm: You can start by looking at the available space and brainstorming ideas for the best use of it. Consider what purpose you want your outdoor space to serve, and write what materials/amenities will help achieve that purpose. Draw a rough map that includes buildings, trees, property lines and fences, paved areas, and any other permanent objects in your yard.     Plan, plan, plan: Once you’ve settled on your ideas, it’s time to make a game plan! For landscaping, it’s essential to consider how shady you’d like your area. This can be accomplished by paying attention to your space for a day and building a map of what sites get high sun and when they do. 

    What types of plants thrive in your climate? Don’t spring for hard-to-care-for greenery if you won’t dedicate the time to maintain it, and consider what’s native to your area. How much space will be taken up by greenery versus other features? Put together a map with the new landscaping and amenity features you plan to add. Once you have a rough plan of what you want and where you want it, it’s time to set a budget, gather materials, create a timeline, and figure out the steps you need to take to achieve your dream space.

    Implement, implement, implement Time to hit the ground running! If the job is too big for you or your family, consider enlisting a landscaping professional’s help. While much of an outdoor project’s landscaping can be “DIY-able,” getting a professional opinion is never a bad idea to confirm you’re on the right track.

    TAKING YOUR OUTDOOR DREAM INTO THE THIRD DIMENSION

    Once you have your rough landscaping maps together, you likely will benefit from seeing a 3D rendering of the result.     BUILDING YOUR DREAM BEFORE YOUR EYES

    There are many moving parts to get to the actual building process of your outdoor design. Balancing between landscaping, appliances, and materials can get overwhelming, and it’s easy to forget some crucial points when starting your project. Before beginning your build, answer these questions for a smooth process without time-consuming roadblocks or unexpected mistakes.     What’s the budget? The budget for your outdoor design project should include any demolition to prepare for the project, the cost of landscaping and landscaping materials, outdoor fabrics and appliances, and labor throughout the project. It’s also important to consider that inflation is currently causing a 5% to 10% increase in the price of building materials, so add some padding to your budget to believe that.

    What’s under and above your yard? Recognize that installing an outdoor kitchen will require utilities such as water, gas, and electrical lines. If you already have those, you’re in a much better position than without, as adding these can be strenuous. Also, understand that you can’t always dig through your yard. There are pipes and wires underground that sometimes can’t be moved. In the air, there are powerlines that taller shrubbery or structures can’t run into. Don’t forget to consider these in your initial planning to save some headaches!

    What materials are optimal for your climate? When selecting materials for your outdoor kitchen, it’s essential to consider the climate and environment in which it will be used. Some materials can’t withstand below-freezing temps, while others can’t withstand constant direct sunlight. You’ll want to select durable, weather-proof or resistant materials that are easy to clean. 

    LIVING THE DREAM

    A decision that should be considered in the initial planning is if you’re bringing in professionals to build and assemble the tougher-to-tackle parts like pouring cement, making a kitchen, or working with electricity. For your safety and the longevity of your outdoor design, we encourage you not to attempt to “DIY” any project aspects that could require more skill to accomplish correctly.     Grilling Ideas for Homegating Food

    Burgers and Hot Dogs

    Let’s be real – the classics are classics for a reason. Between juicy burgers and sizzling hot dogs, you can’t help but enjoy watching the game (even if your team isn’t doing so sizzling hot). For the ultimate burger and dog result, we recommend trying out Ryan Shazier’s burger recipe: 

    What you’ll need: 

    • 100% Grass Fed Ground Beef (2lbs)
      • 3TBSP Worcestershire Sauce
      • 2 Eggs
      • Salt / Pepper
      • ¼ C Breadcrumbs
    • BBQ Aioli
      • ½  C Mayo
      • ½  C Barbeque Sauce
      • 1 tsp red pepper flakes
      • 1 tsp garlic powder
      • 1 tsp minced garlic
      • 1 tsp smoked paprika
      • 1 tsp apple cider vinegar
    • Sharp Cheddar Cheese (Melted on burger)
    • Leaf Lettuce
    • Purple Onion
    • Crispy Onions
    • Pickled Jalapenos
    • Sesame Seed Bun

    Prep:

    • 1. Cook burger medium
    • 2. Toast Bun on Coyote Grill
    • 3. Add BBQ Aioli to both sides of the bun, add beef patty, lettuce, purple onion, crispy onions, pickled jalapenos, BBQ aioli

    BBQ Ribs

    When you place the ribs on the grill, your guests will know you mean business. Try our favorite grilled rib recipe below!

    What you’ll need: 

    • 2 racks of ribs (Pork or Beef depending on your preference) 
    • Dry Rub
      • 1 TBSP Cumin
      • 1 TBSP Smoked Paprika
      • 1 TSP Cayenne
      • 2 TBSP Brown Sugar  
      • 2 TBSP Salt 
      • 1 TSP Black Pepper
      • 1 TBSP Onion Powder 
      • 1 TBSP Garlic Powder 
    • BBQ Sauce 

    Prep:

    1. Pull the ribs from the refrigerator 15 minutes before grilling so the meat doesn’t get shocked when placed on heat 
    2. Rub all sides of the ribs with dry rub   
    3. Place the ribs on the grill (meat side down), then grill and cook the ribs covered for 45 minutes
    4. Brush the ribs with BBQ sauce and then flip the ribs over before brushing on more sauce 
    5. Cook the ribs bone side down for 10-15 minutes
    6. Remove from the grill and cover for 10-15 minutes 

    Rotisserie Chicken

    When has chicken ever been a bad idea? We don’t know too many people who would turn down a grilled Rotisserie Chicken on game day. Try this savory recipe out!

    What you’ll need: 

    • One 3 ½ lb to 4 lb whole chicken
    • 2 TSP Fine Sea Salt 
    • 2 TSP Watkins Organic Poultry Seasoning 
    • 1 Lemon 
    • 1 ½ lb Baby Potatoes 
    • 2 Medium Onions cut into wedges 

    Prep: 

    1. Pat the raw chicken dry with paper towels and remove any giblets from the inside cavity 
    2. Evenly rub the sea salt over and under the skin and then evenly distribute the seasoning throughout the chicken
    3. Put the chicken on a plate and leave uncovered in the refrigerator for at least 4 hours, up to overnight 
    4. Pat the chicken dry again and insert the spit through the cavity 
    5. Truss the chicken with butchers twine (use a piece of twin 4x longer than the length of the bird) while it is on the spit 
    6. Make sure the bird is centered on the spit, then tighten the second fork to lock the bird in place. Squish one-half of the lemon into the cavity. 
    7. Insert into the grill on the highest rotisserie placeholder. Place an aluminum pan with your potatoes and onion directly underneath the chicken. Sprinkle potatoes and onions with salt and pepper. 
    8. Turn the rear infrared burner of your Twin Eagles Grill to high and start the rotisserie by pushing the button on the right-hand side of the grill (it should rotate freely) 
    9. Sear on high with the cover open for 30 minutes, then poke a few holes in the skin to let the juices start running out of it gently. Cook on high for 20 more minutes, then turn off the infrared burner. 
    10. Use a spatula to mix the potatoes and onion, cooking them with juices and fat that drip down from the chicken. 
    11. Turn the left and right burners on low and close the lid, keeping the rotisserie on. You’ll cook the chicken at around 300-325 degree until the internal temperature of the thickest part of the breast is around 165 degrees. 
    12. Finish crisping the skin by turning the side burners off and turning the infrared rotisserie back on until the skin is deep golden brown and the thickest part of of the breast is 180 degrees. 

    Grilled Veggies and Skewers

    If you have guests who prefer a lighter option, grilled veggies and steak skewers are a perfect choice! Try this easy, quick, and tasty recipe!

    What you’ll need:

    VEGGIES:

    • 2 Portabello Mushrooms 
    • 1 Eggplant 
    • 1 Zucchini
    • 1 Yellow Squash
    • 1 Onion
    • 1 Bunch Thick Asparagus 
    • 1 Red Bell Pepper
    • 2 TBSP Extra Virgin Olive Oil 
    • 1 TBSP Kosher Salt 
    • 1 TBSP Freshly Ground Pepper

    Prep: 

    1. Preheat the grill to 350 – 450 degrees 
    2. Cut eggplant, zucchini, yellow squash, and onion into ⅓” to ½” slices. Cut red bell pepper into quarters and trim the ends of the asparagus
    3. Drizzle veggies with olive oil and sprinkle salt and pepper
    4. Grill veggies with the lid closed until tender and lightly charred over (about 8-10 minutes for peppers, onion, and mushrooms and 5-7 minutes for yellow squash, zucchini, eggplant, and asparagus)

    STEAK SKEWERS:

    • ½ C Olive Oil
    • ½ C Soy Sauce
    • 3 Cloves Minced Garlic
    • 1 TSP Black Pepper
    • 2 lbs Sirloin Steak (cut in 1 inch cubes) 
    • 8 Metal Skewers 

    Prep: 

    1. Whisk together olive oil, soy sauce, garlic and pepper
    2. Add the cubed sirloin steak to marinade and toss to coat. Cover with plastic wrap and let marinate for 30 minutes – 1 hour
    3. Thread cubed steak onto the skewers
    4. Grill kebabs on medium heat (turning often) until all sides are well brown, about 12-15 minutes 

    Appetizers

    Last but not least, you can’t forget about the appetizers! While everyone waits for the main course, whip up a quick and easy snack such as: 

    GRILLED SWEET POTATO NACHOS

    What you’ll need: 

    Nachos
    • 2 Large Sweet Potatoes 
    • 1 TBSP Olive Oil 
    • 1 TSP Chili Powder
    • 1 TSP Cumin
    • 1 14 oz. Can Refried Beans 
    • 1 C Frozen Sweet Corn 
    • 3 oz. Multigrain Tortilla Chips 
    • Chopped Cilantro (for topping) 
    • Crumbled Cotija Cheese (for topping) 
    Cheese Sauce 
    • ½ TSP Butter
    • 1 Large Clove Minced Garlic
    • 1 ½ C Milk
    • 2 TBSP Flour
    • ¼ TSP Salt 
    • ½ C Shredded Cheese 

    Prep: 

    1. Turn grill on medium-high heat
    2. Wash sweet potatoes and pierce with a fork. Wrap them in a paper towel and microwave on high for 4 minutes 
    3. When cool enough to handle, cut sweet potatoes into wedges and toss with olive oil, chili powder, and cumin (and salt to taste)
    4. Transfer sweet potatoes to grill and cook for a few minutes on each side until roasted
    5. While cooking, heat the refried beans on the stove or in the microwave until warmed through, and roast the corn in a dry nonstick skillet until golden brown
    6. Arrange chips in a single layer and top with sweet potato wedges, black beans, and corn
    7. Melt the butter in a small saucepan. Add the garlic and saute for 1-2 minutes. 
    8. Add ¾ cup milk and heat until simmering. 
    9. Add the remaining ¾ cup of milk with flour and then add to the saucepan and stir until smooth and thick
    10. Remove from heat and whisk in the salt and cheese until melted
    11. Drizzle the cheese sauce over the nachos and top with cilantro and Cotija cheese

    If you have been part of the football season culture for even a short period of time, you know the party doesn’t stop when the temperatures drop. In fact, that’s when the excitement starts to heat up. So the question is: How do I homegate in the winter?  

    Can a Grill Stay Outside in Winter?

    Whether you’re preparing for the Super Bowl or Rose Bowl or somewhere in between, we have good news for you. You can absolutely grill in the winter! Just be sure to 

    • Give your grill a little extra time to warm up in colder temperatures. 
    • Have extra fuel for the grill. Cold temperatures may cause your grill to need a bit more of a boost!
    • Keep your grill lid closed as much as possible (keep the hot air in!) 
    • Have a warm pan ready to transfer your meat onto once it’s done. 

    How to Store a Grill in Winter

    If you decide to hang up your tongs and grilling apron for the winter months, make sure you’re storing your Coyote grill correctly so it’s ready for use come spring. 

    Prep your grill for winter hibernation by:

    • Cleaning it thoroughly: Deep clean your grill gates and coat them with a high heat oil. If your grill has a grease cup, make sure you empty it. Remove the ignition battery from your electric starter if your grill has one. 
    • Winterize it: Protect your grill from potential pests by cleaning any venturi and tube burner it might have. Wrap them in plastic to prevent pests from entering. 
    • Store it: Once your grill is clean and winterized, select a properly sized grill cover to protect your grill from the elements and pests. Store the grill in a dry, cool, and covered place. If you’re storing a gas grill, be sure to disconnect and remove the propane tank.
